I’m dangerously low on food supplies. Mostly because I’m lazy and haven’t hooked up a ride to the Weggie’s for a BIG shop. Also, I’m moving in 2 weeks so keeping pantry low is better for my friends who will help me move because they love me.
That said, I do get to the Lexington Co-op with my darling co-worker Heather weekly. As well as the Price-Rite up the street which is very walkable, but only two/three bags worthy for walking home.
And tis Farmer Market time! So the Elmwood-Bidwell Market and I will become good friends once again, especially since I’m moving back down the street closer to Bidwell!
This morning I looked into the depths of my refrigerator and found very few options. pantry, even worse.
I ended up taking a lonely yellow squash, slicing it and dipping it in soy milk (no eggs, I have no eggs in my fridge can you believe it!) and coated the pieces with bread crumbs, garlic and Parmesan cheese and baked it in the oven. Yum. (Wishing I had another yellow squash right now, it was delicious!)
