Happy Mardi Gras!

I found this picture of me and Brenda and posted it on Facebook this morning. I remember that day well, hanging out in Allentown on FatĀ  Tuesday with not a care in the world that we had to work (go to school) the next day. That my friends, was in 2006. 11 years ago?

My I’m getting old. Doesn’t feel like a day has passed.

These days? My excitement over Mardi Gras involved making some sort of themed dinner for HWMMS.

Scallop Po Boys and Sausage Gumbo.

For the sausage gumbo I omitted the okra because we didn’t have any. I used Shirataki Rice and half the broth was a quart of the shrimp bisque I made a while ago. While I had plenty of time to make the gumbo over the stove or even in the crockpot I’ve found thatĀ  I simply prefer the work of my beloved Instant Pot Electric Pressure Cooker. Making pretty much everything in this machine makes the flavors melt into each other. i honestly am in love.

Cooking dinner for people I love makes me happy.

Oh, and after I made this? I roasted a turkey for lunch/dinner the next few days.
