Coulibiac of Salmon

Since I’ve been upping my wifey game this week, I spent sometime this morning on Pinterest browsing recipes to make for dinner, you know, I think they call it meal planning? Ha.

Anyhow, I stumbled upon this glorious pin and my mouth started watering. Coulibiac of Salmon

Two things.

  1. The fact that my mouth was watering over salmon would make Jenny from 5 years ago laugh. It took me a while to come around to this healthy pink fish.
  2. I can’t even pronounce the name of the recipe so I know this isn’t going to go as planned.

Ok, that said. My plan was to make Coulibiac of Salmon or as I called it Salmon in Puff Pastry Shell.

I went through the recipe and realized I needed to buy—puff pastry shell, dill, mushrooms….crap—we don’t have brown rice? AND I THOUGHT WE HAD SALMON. Oops instead I found a bag of cod filets.

One of my intentions with this meal planning thing is to try to use up items we have already, like the salmon I thought we had that is really cod. HWMMS thought the cod would be a fine replacement, so we went grocery shopping with the intent of making this dish. You know, buying mushrooms, dill, puff pastry shell and milk, we ran out of milk too. Somehow that ended up into $88 at the checkout. AND I FORGOT THE DILL AND BROWN RICE. I also picked up those canned crescent roll dough tubes as a substitute for the puff pastry, why? Why not.

Obviously this dish wasn’t meant to be. And to be perfectly honest, I wanted it with salmon anyhow which wasn’t going to happen. I think I knew this while shopping, somewhere deep inside.

I decided I was going to make a beef pie instead. But not a fancy Beef Wellington pie oh no, this was going to be ground beef pot pie. Because I have a whole lot of ground beef still left from that 1/2 cow a while ago, but none of the good roasts. Weep.

I must have started with a recipe somewhere, but…well, here’s what I did.

Sauteed a package of sliced mushrooms and a bunch of onions with butter in a pot. Added garlic.

Added ground beef, peas, some tomatoes I found in the fridge and a handful of shredded carrots together in another bowl.

And then I found a bag of turnip greens in the freezer that I quickly cooked with red wine vinegar and soy sauce.

I gently popped open those wonderful delicious, evil little crescent roll containers and rolled out the dough and put together the pies.

Convection oven at 400 for 30 minutes? 25? I forget. I knew they smelled good so I took them out.

Not bad, not bad at all. The bottom dough was gooey because of the wet greens, but over all a win. I do believe this was my first meat pie. And no, no people were harmed in the creation of said pie. Yes, HWMMS totally Sweeney Todd asked this question before taking his first bite.
