Soup is good.
Soup is Comfort Food.
I love soup.
. I started thinking that I wanted a nice, hearty potato based soup. I thought I had mushrooms in the fridge that needed to be used so I started plotting a creamy mushroom soup in my head.
Once i got out of bed I realized I was fresh out of mushrooms. Not even any of those delicious dehydrated packages that I try to keep in the pantry. Boo.
I grabbed two large jars of homemade turkey stock (canned from Thanksgiving) put it in a pot on the stove and added about ten cut up potatoes to boil. While waiting for the potatoes to cook, I took a bag of pearl onions and a package of bacon and sauteed them in a pan with some white wine, adding some thyme and rosemary.
Once both of these items cooked I blended them in a food processor to make the thick potato broth. Added a pint of cream, a package or roasted garlic hummus I found in the freezer and a cup of milk and set on low.
While the broth smelled AMAZING cooking, it needed something, something…I didn’t have mushrooms BUT I did have a pound of ground beef thawed in the fridge so I took that and cooked it up with a bunch of spices and added it to the soup.
Now, the hard part. Waiting for the soup to meld together as one. Patience. Patience
