Since discovering this amazing soup at May Jen this year Since discovering this amazing soup at May Jen this year it has been on my mind to recreate it at home. This was my first attempt.

I started with this recipe for Tomato Egg Drop Soup. Which I thought was odd because it added BACON. But um, bacon makes everything better, so ok!

My version.

I started with homemade chicken stock and added fish sauce, soy sauce, a pinch of chili spice, a pinch of lemongrass and a few sugar cubes. Brought this to a boil.

In a large pan I sauteed bacon, garlic, scallions…and then added tomatoes. Once this was cooked I added it to the broth.

Next step, eggs. Which I have to admit was really weird! And then some cornstarch and water to thicken.

My mistake? I did not add enough tomato. So I added some salsa I found…which still didn’t taste tomato-y enough so I added some marinara sauce. Next time lots of fresh tomatoes. And maybe more lemongrass. And less bacon. (I can’t believe I typed that…) I sort of want to stick to the original vegetarian kind they serve at the restaurant.
