SUNDAY IS GAME DAY! Bring on the Steelers! I’m wearing my #78 jersey along with a nice cozy jacket I picked up at the Ladies of Charity Auction last month (for only $3!) My work schedule is only 8am – 2pm today so I’ll be home with plenty of time to watch the rest of the game. Oh and LET’S GO JETS.
Last night I had ANOTHER dream where I’m being forced to participate in a mass terrorist shooting event, whhhhhhhhhhhhhhaaaaaaaaaaaaaaaaaaaaaat is in my braaaaaaaaaaaaaaaaaaaaaaaaain?
I’ve also found myself back into the light-headed dizzy world and not even when just getting up and down from laying down. And my chest has been icky and breathing a bit labored too. Sigh.
What to say, what to say? Living on the edge this Sunday morning – I just typed the word “cheese” into the Aldi search engine.
One wee rant – every time someone comes into the hospital and tells me “I thought the President did away with masks —-” I want to scream STATES RIGHTS! But I don’t. I smile and say, NY State still requires masks in hospitals.
Coming home from work this afternoon I saw that the wee rose bush that HWMMS is trying to grow by the mailbox ACTUALLY BLOOMED! This made me smile. He was SO UPSET when the Town/County? Someone? Who mows the roadside area clobbered the little bush earlier in the summer. What a little fighter. I had to stop to take a photo.
After THAT game – OMG!
…and a long nap. BECAUSE THAT’S ALL I DO IS NAP when I work the morning shift…I did a little cooking for the week. Made two lasagnas, but didn’t take a photo because I might have burned the top of the cheese a little and while I scraped it off and it will still be tasty, it looked horrible.
And then I FINALLY made a few calzones. Broccoli Cheese & Spinach Mushroom Sausage.
Recipe? I use prepackaged pizza dough. A mix of ricotta, cottage and parmesan cheese with egg. Shredded mozzarella/cheddar cheese. I sauteed perpetual spinach, chard and mizuna greens with olive oil, garlic, chives and added mushrooms. Added this mix to sausage/onion. The other batch just plain ol broccoli was added.
When I make calzones, they are pretty dry – I don’t add sauce inside the dough – BUT I highly encourage YOU to dip dip dip away with the sauces of your choosing. Bake at 400 for 30 minutes.
Oh yeah – I also did a totally random dish with leftover breaded eggplant, a layer of the sauteed greens, a layer of the ricotta mixture and a layer of mushrooms. I then added (no, I can’t make this up….) um – well I took the one jar of white chicken chili that was still in the fridge and I added a bunch of the tiny white eggplant and blended it together in the food processor to make a “white” “sauce” of sorts? Topped the dish with the “white sauce” and layer of mozzarella cheese. I haven’t tried this yet, still in the fridge but the “white sauce” was tasty, I did try it before dumping it on the veggies.
Yes, this is how I cook.
I wanted to do sweet breads and muffins but it got late, fast. Another day…
