What did I do after the game? I did my weekend cooking. So much cooking.
Let’s start with the one item always happening at Weber Wonderland this time of year…SOUP.
I made broccoli/cauliflower cheesy rice the day prior, but decided to turn it into soup instead by adding chicken stock and cream of mushroom soup cans. Exciting, I know. Ha.
From there I had a request from HWMMS to make a deconstructed egg roll mixture. WOWZA. The day after once all the flavors set in – so, so SO GOOD. My friend Denise makes this all the time and I’ve always had it in the back of my mind. WHY DID I WAIT SO LONG? Sauteed sausage and onions and garlic – add shredded cabbage and carrots, soy sauce, ginger, rice vinegar, sesame oil and vegetable oil. I put it in the oven for about 10 minutes after mixing all together to make sure the cabbage was cooked down a bit more. My goodness. Delicious.
Next on the agenda – something I was craving. Bacon/Onion pie. Add a whole lot of shredded onions and chopped bacon to giant cast iron pan and cook down to caramelized state. Stir a lot because well, things stick to these pans and that makes HWMMS VERY UNHAPPY.
I used pre-made pie crusts because, I suck at pie crust. And then poured in the onions and bacon and added scrambled eggs with sour cream and topped with chive onion powder.
YUUUUUUUUUUUUUUUUUUUUUMMMMMMMMMMM.
EGGS BACON AND ONION are three of my favorite foods, so yeah. Delish.
Oh and that’s not all! I had roast beef and a wee bit of French onion soup leftover in the fridge so I created the “I can’t believe it’s not a Beef Wellington” bake.
Sauteed onions, carrots and mushrooms. and garlic. Add beef and French onion soup and random packet of beef pot roast gravy mix from pantry.And flour to thicken a bit. Layer puff pastry shell on bottom of casserole dish, pour beef mixture on top – add shredded cheese and top with another layer of pastry dough.
Not to outdo myself, but I did ANOTHER random bake with puff pastry dough but with canned salmon. Sauteed mushrooms and onions and Swiss chard and garlic and dill. Two cans of cream of mushroom soup. Parmesan cheese.
Finished product waiting to be cut and half frozen because HOLY MOLY SO MUCH FOOD.
