Cow. In Frozen Packaged Form.
Mmmm. Meat.
This year we bought 1/2 a cow from the farm where my step-dad and step-brother work. We got a SUPERDUPERAWESOME deal per pound (see the last sentence, it’s the farm where my family works…so we get a really good deal.) HOWEVER buying a 1/4 or 1/3 cow in bulk will ALWAYS be cheaper and more economical if you can afford the cost up front and have the freezer storage space.
Somehow, there was room for 400 pounds in the freezer. We did a great job of getting through the last cow, all the steaks and roasts YUM! But we still had quite a bit of ground beef to get through.
I started to pressure can a few pounds to save room. THIS is something entirely new to me and foreign but seriously convenient in the end. Meat in a jar! WHY DID IT TAKE ME SO LONG TO EMBRACE THE PRESSURE CANNER?
Also, I just made a ground beef enchilada casserole in the Instant Pot Pressure Cooker, in just 7 minutes and it is AMAZING. Pressure canning and cooking for the win!!! Don’t be afraid!!!
