Yesterday my mom had a doctor appointment in Buffalo and was away from the home for several hours. I told her I would bring her whatever she wanted for lunch when she returned.
She actually listened, and requested pizza. So Julie’s it was.
I made the mistake of telling HWMMS that I bought pizza for my mom and her roommate and myself and left the extra slices for them to eat later. Meaning, no pizza for HWMMS. And then I was well, basically asleep all night, so this morning before he went to work I asked what he would like me to make for dinner. His request?
Pizza.
Or meatloaf.
So I made both.
Sausage and cheese. And homemade crust. I was going to cheat, but I forgot the dough when leaving the grocery store.
Broccoli, mushroom, onion, garlic and white sauce.
Crazy Chuck Meatloaf on the left (spicy brown mustard, tobasco sauce and red chili pepper) and Normal Boring Meatloaf on the right. I also added lots of mushrooms. I’ve been on a serious mushroom kick lately.
Currently Googling “Health Benefits of Mushrooms” cause I’ve been cooking with them a lot lately and also, 2:30 am.

AND I did up a pan of caramelized onions and mushrooms and started a french onion soup in the crockpot. Because, well, I still had some leftover roast. AND—french onion soup is delicious and I promised mom I’d bring her some.
You’d never know it was just me and HWMMS living here. I always cook for crowds.
