Crockpot White Chicken Chili for the win! In fact it was so delicious, HWMMS requested I make another batch to bring along with us to the Fort this weekend. (Although I don’t think White Chicken Chili is period appropriate dinnertime fare.)
My recipe: I took a package of chicken, celery, two cans of white beans, corn, onions and added a jar of my homemade veggie stock and covered the rest with water and added cumin, oregano, chives, salt/pepper and slow cooked overnight. The next day I added a pint of sour cream, sliced jalapeno peppers, diced tomatoes and a ton of fresh cilantro, oregano and chives from the herb garden.
And I have two racks of Baby Back Ribs soaking up a Honey BBQ/Applesauce blend. Nothing fancy here I used Sweet Baby Rays and a jar of my homemade applesauce from the pantry.
