You can tell I’m feeling better since I started cooking a wee bit again. Earlier in the week I made MaCORNA salad.
And although it’s been a week or so, there was a St. Patrick’s Day Corned Beef Brisket with veggies I put in the crockpot.
HWMMS goes INSANE with the bay leaf. That is not my doing, always him. It makes me laugh. In the crockpot one corned beef brisket, potatoes, carrots, mushrooms, onions and water. DELISH.
I made another giant stockpot of veggie soup. Carrots, onion, celery, mushrooms, grape tomatoes, garlic. And then after boiling it down for a day, I added sage sausage to cook down into the broth and then a bag of cheese tortellini for dinner. OH MY GOSH. I knew the sage sausage soaking in that broth would be good, but I had NO IDEA HOW GOOD. Pure liquid gold. HWMMS even said he thinks that’s the best broth I’ve made so far! WINNING!
And then he brought up —- FRENCH ONION SOUP (AS HE DOES.) Which is something I was planning on making with the leftover broth from the corned beef anyhow, but HWMMS was on fire and inspired and sat down and cut up 5 pds of onions…
So I obliged. I took the remainder of the corned beef veggie mixture and blended it in the blender and added to today’s broth (minus the tortellini, I removed those.) The onions were low and slow for a few hours…and now, right before bed I dumped them (and the waaaaaaaaaaaay too much butter mixture) into the broth in the crockpot.
Waking up tomorrow is gonna smell SO GOOD!
And then HWMMS asked (nicely) if I was ever going to make the banana bread out of the (not rotten but very brown) ripe bananas that have been sitting around for over a week. Sigh. Yes, yes I was. So, I went into the pantry and grabbed a can of pumpkin (which I knew I had because I recently did a redo – inventory of everything and realized I still had canned pumpkin from a few years ago to use up!) and made some banana pumpkin bundt cake bread.
Perfect texture…but, oopsy. I had too much fruit so I added more flour but I forgot to add more sugar too. No problem, just drizzle honey on the slice instead! Or as HWMMS requested, maaaaaybe use it to make french toast?
Mmmmm. French toast.
I also used the remainder of the banana pumpkin mixture and added peanut butter and stuffed about 27 bones and put them in the freezer for the doggos. THEY LOVE THIS MIXTURE. Another thing I’ve been meaning to do, but…been sick.
What will tomorrow bring?
