I needed chocolate. And the Brownie Cookies I made last weekend would not do…I wanted cake. (Like the cupcake I split at Cafe 59 earlier this week…dark chocolate with vanilla frosting.)

So what’s a girl to do? Make a cake of course!

I made a VERY CHOCOLATE CAKE by scratch. The layers came out perfect. In order to satisfy my craving for chocolate cake, I took a spoon and slightly hollowed out one of the layers. Mmmmm. Cake. And then I filled it with strawberries. Mmmmmmm! I finished the cake off with a cream cheese frosting and put a few blueberries around the middle.

I had extra berries in the fridge from the Berry Poppyseed Chicken Salad on a Bed of Baby Spinach I made for the 4th of July.)

Now here’s a funny story…while making the cream cheese frosting, I accidentally poured granulated sugar into the bowl instead of confectionery. I mixed and mixed and oops! Realized my mistake. Instead of wasting a bowl of cream cheese and sugar, I decided to add some eggs and vanilla and make a cheesecake. And then try again with the frosting.

I also had extra sliced almonds leftover, so I threw them on top and drizzled the cake with Amaretto.

Holy desserts! I guess I’ll be taking them to the Wing Chun Picnic tomorrow, I hope they don’t mind.
