Tis the season! SOUP SEASON!

Also, bought two *new* to me soup cookbooks…for inspiration.

Potato Leek w/ Back Bacon

Broth exceptionally flavorful – stock made from corn on the cob and dozens of apple cores cooked the potatoes in the broth and then blended to make nice and thick.

Stuffed Pepper Soup

Never did I ever imagine ground beef to be a luxury item. But, here we are.
In addition to the outrageous price of ground beef, there’s not a chance in the world, now, I will be buying or even eating any from restaurants…no thank you regime possible contaminated foreign horse meat. Hard nope.
I’m not sure of the last time I bought ground beef to be honest? Freezer was filled with ground venison most of the year and I switched to ground turkey or pork sausage as a replacement.

However, a few weeks ago I tried to replicate the divine stuffed pepper soup from Peace of the Pie and used sausage and while it was good, it was decidedly NOT STUFFED PEPPER SOUP. Need. Ground. Beef. So I sent HWMMS out to Davies Hillside Farms for the win. A splurge! And yes, I realize the privilege of being able to drive a few minutes into town to get locally sourced meat.

Stuffed pepper soup! Mmmm. I used two jars of homemade sauce from the garden haul last weekend and along with veggie stock. I’ve been obsessed thinking about this damn soup after Moonwife tasted the green tomato sauce I made last weekend and said it would make a great base for stuffed pepper soup. She. Was. Not. Wrong.

Avgolemono.

So lemony. So so lemony.

French Onion Soup.

It takes days to complete but is always so worth it.
