Holy accidental amazingly delicious dinner. WHO KNEW?

(Warning, I’m gonna be THAT blogger and go on for a bit before posting the recipe…sorry not sorry.)

Dinner tonight was going to be homemade pizza. I have sourdough pizza crust in the fridge that needs some delicious toppings. (Made with discarded starter, I can’t bear to throw all of it down the drain!) BUT a homemade pizza would require a trip to the grocery store because we are out of — are you sitting down? — cheese. Well, technically not OUT OF CHEESE but out of mozzarella cheese which I need for the pesto basil tomato caprese pizza on whole wheat sourdough crust I had in mind. Tomorrow. Tomorrow there will be pizza.

Accidental Mushroom & Onion Risotto? Ok!

I went in the pantry and grabbed Jasmine rice without a real goal in mind. I had half-heartedly thought a seafood mushroom Alfredo pasta but—no Alfredo sauce and no milk or cream. So…rice? Sure why not?

Not in the mood for cilantro rice, although MMMMM CILANTRO.

Lo! Two cans of Cream of Mushroom soup lurking in the corner called out my name. I hear thee cans of soup! I hear thee! (Disclaimer—I haven’t have a can of soup in years and years and years and years EXCEPT FOR CREAM OF MUSHROOM which I do admit helps bring together a quick meal in a pinch. All other cans of soups do not exist at Weber Wonderland. I do EVERY STOCK homemade. Every. Single. One.)

I grabbed the extra-large package of sliced mushrooms, a red onion, garlic and some olive oil and sauteed the deliciousness together. I put half of this mixture in the bottom of the Instant Pot with a can of soup and then two cups of rice and topped it off with more mushroom mix and another can of soup AND A HANDFUL OF FRESH ROSEMARY from the garden. And pink salt and pepper.

I pressed the rice setting. And ended up in heaven.

I always HATE how everything sticks to the bottom of the Instant Pot but IT INFUSES THE FLAVORS SO DAMN NICELY I WILL NEVER EVER COMPLAIN.

Holy yum. And surprisingly the exact right consistency of a risotto, hence me calling it risotto even though it is a fake risotto with can soup and required only a button on the Instant Pot instead of 20 minutes of continual stirring. No one would know the difference.
